Working for a major healthcare organization, I recently did elbow to elbow, end user support for the release of one of our new products.  In doing, that I had the opportunity to interface with many staff members from all different levels.  One staff member, a middle aged woman, who I engaged conversation with, told me that she was a Breast Cancer Survivor, which I had a difficult time believing because she looked to be the picture of health, not to mention the fact that she was very positive, friendly, and a seemingly happy woman, who always greeted you with a smile.  She stated that she had been in remission for 4 years and that if she stayed in remission for just one more year that she would be considered "Cancer Free".  As the conversation continued, she told me that prior to discovering that her cancer was in already in stage 2, she had a mammogram in which the cancer went undetected. Quinoa and Black Beans Recipie

Ingredients 1 teaspoon vegetable oil 1 onion, chopped 3 cloves garlic, peeled and chopped 3/4 cup uncooked quinoa 1 1/2 cups vegetable broth 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper salt and pepper to taste 1 cup frozen corn kernels 2 (15 ounce) cans black beans, rinsed and drained 1/2 cup chopped fresh cilantro Directions Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes, Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

Quinoa is also known as ancient rice, because it can be used in many recipies in which rice is called for. However, quinoa is actually not a grain as it appears, it is really a plant. Quinoa is extremely nutritious, because it is low in fat and sodium, high in fiber, calcium, phosphorus, magnesium, which helps migraine headaches, as well as more iron and copper than numerous other foods that are part of the grain family.  Let's not forget the fact that it is high in protein. It is called the perfect protein because it contains all 8 amino acids, and to top it all off, it is gluten free!

Play Review - Blues For an Alabama Sky

Blues for an Alabama Sky is an absolutely delightful play that plucks you out of the year 2011 and takes you back to the 1930's, to Harlem with the assistance of authentic music from legends such as Billie Holiday, Louis Armstrong and more, along with rich 1930's style costuming and a neatly packaged set. Our economic depression is just as real as the 1930's depression depicted in this play and the similarities are not by coincidence. Although the play starts slowly, it manages to pick up the tempo just at the right time to keep the audience involved.  As a director, Sheldon Epps has a nack for pulling his audiences in every time. Robin Givens, who has come a long way from her television and big screen roles, displays her seasoned acting skills on stage. She truly brings her sassy, sexy character "Angel Allen"  aka "Angel Eyes" to life and seems to carry the play with ease along with her counterpart, Guy Jacobs, who is played by Kevin Carroll.
